  • 1/2 cup of Whole Milk
  • 1 stick of Salted Butter
  • 1 cup Sour Cream
  • 1 1/2 tsp Salt, Divided (1 tsp in the potatoes, 1/2 tsp in boiling water)
  • 1/2 tsp Onion Powder
  • 1/2 TBS Fresh Minced Garlic
  • 2 TBS Minced Chives
  • Freshly Ground Pepper to Taste

1. Potato Masher or Potato Ricer

3. Strainer / Colander

To make draining the steaming hot potatoes from the pressure cooker easier, you can either use a snap on pot strainer like the Kitchen Gizmo Snap N Strain Pot Strainer and Pasta Strainer or you can use a standard colander like the HiramWare Stainless Steel Colander.

Garlic Mashed Potatoes Instructions – Merry Mashing!

1. Peel & Pressure

First, peel and quarter your potatoes (unless you like the skin on them, then just quarter them. Personally I am team #potatoskin). Place them in the Instant Pot with enough water to cover them and add 1/2 tsp salt, then secure the lid. Cook them on high pressure for 15 minutes, then carefully release the pressure according to the cooker’s instructions.

2. Butter, Season, & Mash

Once your potatoes are tender and steamy, carefully drain them (a colander or pot strainer is useful for this) and return them to the pot. With your KitchenAid Masher at the ready (or a potato ricer), it’s time to transform these spuds into fluffy clouds of deliciousness. Add in the butter, salt, and spices, and begin to mash the potatoes. About 1/2 way through mashing (after the butter has melted), add in the sour cream.

3. Thin to your Liking & Serve

Next, add in whole milk until the potatoes reach your desired thickness (we like them THICC potatoes). You may or may not need all of the milk called for. Or, if you prefer a thinner mashed potato, you can add more milk than what is called for. Mash until the potatoes reach your desired level of lumpiness. We like a few small lumps in ours as it balances some texture with fluffiness! Stir in the 2 TBS of minced chives and voila!
