Garlic Ghost Pepper Seasoning Recipe | How to Mix Heat and Flavor

This fiery blend is a signature ingredient in the Fiery Twisted Tater from Universal’s Halloween Horror Nights. Now you can recreate the heat right at home!


Ingredients for Ghost Pepper Seasoning

First off, let’s round up our ingredients:

  • 2 ghost peppers (fresh or dried)
  • 1 Cup Salt (Pink Himalayan or Sea Salt)
  • 5 Cloves of Garlic
  • 1/2 TBS Paprika
  • 1/2 TBS Sugar
  • 1 TBS Onion Powder

These spices are our ticket to a fiery seasoning that balances heat with flavor. If you REALLY want a spice that BURNS, double the number of ghost peppers.

1. Food Processor

Tool-wise, all you really need is a food processor (although a good knife and cutting board help too). Our processor of choice for this spicy journey is the Cuisinart Food Processor, Mini Prep Model. 2. Spice Jars

Burn Baby Burn! – Ghost Pepper Seasoning Instructions

WARNING: Be careful when handling ghost pepper – it’s one of the hottest peppers in the world! We STRONGLY recommend wearing gloves when handling the peppers and when bottling the seasoning. Additionally, wearing a face mask helps protect your lungs from the spicy dust when bottling and re-processing after dehydration.

1. Turn up the Heat

Preheat your oven to 200 °F, and cut the stems off of your ghost peppers, but leave the seeds!

2. Blend it Up

Place all ingredients into a food processor and pulse until there are no visible chunks remaining. The seasoning mix will be wet, but don’t worry, we’ll fix that in the next step. If you want a very vibrant salt, feel free to add food coloring as desired at this point and process until the color is evenly distributed.

3. Dehydrate

Dump the wet seasoning mix onto a baking sheet and dehydrate in the oven for 30 minutes. After 30 minutes scrape the pan using a metal spatula and redistribute the seasoning mix. The seasoning will be sticky and will clump together. It is all part of the process! Put it back in the oven for 30 more minutes.

4. De-Clumpify

Once fully dehydrated, take the seasoning clumps and re-process in your food processor until the seasoning mix has no more large clumps. Please note: you can skip the dehydrating and re-processing steps (steps 3 & 4) if you have used all dehydrated / dried ingredients. However, using the fresh peppers and garlic will give you a more brightly colored seasoning and will distribute the ghost peppers and garlic more evenly throughout the seasoning mix.

5. Bottle it up

Finally, bottle up your seasoning in a salt shaker and spice up your plate!
