The Ultimate Wookiee Cookie

This iconic treat, inspired by our favorite furry co-pilot Chewbacca, is a mainstay at Galaxy’s Edge in Disney World. This Wookiee-sized Star Wars snack is sure to satisfy your sweet tooth! But don’t worry if you can’t make it to the park – we’ll show you how to create these epic cookies right in your own kitchen.

What is a Wookiee Cookie?

The Wookiee Cookie, available at Backlot Express near Galaxy’s Edge, is essentially a giant oatmeal cookie sandwich. Two chewy, buttery oatmeal cookies hold a generous layer of fluffy (but not too sweet!) cream filling. The finishing touch is a mini chocolate bar decorated with edible silver paint to resemble Chewbacca’s iconic bandolier. It’s a Star Wars snack designed to satisfy even a Wookiee-sized appetite!

While the Wookiee Cookies at Galaxy’s Edge can be delicious, they can also be a hit or miss. There have been multiple versions of this snack, and one is definitely better than the other. Version one, the original, consisted of two beautifully buttery oatmeal cookies. They were full of flavor and were absolutely chewy and delicious! However, the latest version that the park offers consists of two oatmeal cookie “disks” that are dry, pretty bland, and taste mostly of baking soda. Because of this, we had to give this Star Wars Snack a rating of 3/5.

Luckily, with a good Wookiee Cookie recipe, and some top tips, you can make this Star Wars-inspired treat at home and have it turn out perfectly every time. We did have to go through several versions of this recipe to get it right. Too much butter and your cookies will melt into a single, buttery blob. Too little, and they are VERY dry! So here are our top tips for perfect Wookiee Cookies!

Tips for the Perfect Wookiee Cookie

Blend up 1/2 the Oats: To get a smoother, more professional looking crackly cookie top, blend up half of your oats into oat flour before adding them to your stand mixer. While this is not necessary, if you want to recreate the Wookiee Cookie as closely as you can . . . this will get you there!

Don’t Walk Away: Don’t walk away while whipping the heavy cream into the frosting! This frosting can easily over whip and fixing it will take more time than it is worth.

Refrigerate the Filling if needed: This frosting will hold its shape for a few hours at room temperature, but will start to melt at higher temperatures. If you want to serve these for a party, I recommend refrigerating the filled cookie sandwiches until an hour before your event for the best results.

Ingredients

For the Cookies:

  • 3 cups (300 g) old fashioned rolled oats (divided, 1/2 blended)
  • 2 cups (240 g) all purpose flour
  • 1 1/2 cups (173 g) chopped pecans – *Optional
  • 1 cup (200 g) brown sugar, firmly packed
  • 2 sticks salted butter (227 g), barely softened
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup self-rising flour
  • 2 eggs
  • 4 Tablespoons cornstarch / corn flour
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 tsp allspice

For the Filling:

  • 4 oz (110 g) full fat cream cheese, room temp
  • 1 7oz jar (196 g) marshmallow fluff
  • 1 cup (115 g) powdered sugar – confectioner’s sugar
  • 1 1/2 cups (360 ml) very cold heavy cream
  • 1 tsp vanilla bean paste (or vanilla extract)

  1. Cream the Butter and Sugar

    In the bowl of your stand mixer, using the whisk attachment, cream the butter and sugar together until it lightens in color, and approximately doubles in volume. Scrape down the sides of the bowl as needed.

  2. Add Eggs & Spices

    Next, add the eggs, cinnamon, vanilla, and allspice. Whisk together until combined.

  3. Paddle in the Dry Ingredients

    Switch your stand mixer over to the paddle attachment, and add in all dry ingredients (oats, all purpose flour, self rising flour, baking soda, salt, cornstarch, and pecans – if using). Process until there are no dry spots left.

    TOP TIP: If you want to achieve that smooth but crackly top from the parks, blend up 1/2 of your oats into oat flour before adding to your stand mixer.

  4. Shape, Refrigerate, Preheat

    Divide your cookie dough into 10 even balls (we recommend using a kitchen scale so the cookies are even sizes). Place two cookie balls on a single, parchment lined baking sheet, ensuring there is enough space between the cookies. Once all cookie dough balls have been placed onto parchment sheets, flatten them with your hands or a glass so that the dough becomes a disk about 1/2 inch thick (1 cm). Then place all the flattened cookies into the refrigerator for at least 30 minutes, or up to overnight.

    TOP TIP: DO NOT SKIP THE REFRIGERATION. Placing the dough in the refrigerator allows the butter in it to cool down, which prevents the cookies from spreading too thin and burning.

    While the cookie “disks” are chilling, preheat your oven to 300°F (148° – 150° C.).

  5. Bake & Cool

    After the cookie dough disks have chilled for 30 minutes, bake them for 15 -20 minutes, or until the center is set (not jiggly when you jiggle the pan). Baking time will vary based on your oven type (gas vs. electric), and your oven settings.

    Once baked, let cool completely on the pan before adding the filling and chocolate decorations.

  6. Fill & Decorate

    Once the cookies have cooled completely, add your frosting into a piping bag fitted with a star tip, and add a generous layer between two of your oatmeal cookies.

    To make the chocolate bandolier, take mini Hershey’s bars, divide in half lengthwise (long ways), and decorate using edible silver spray or edible silver paint. Affix to the cookie using a dot of your frosting.

    Serve this Star Wars recipe immediately, or keep refrigerated until 1 hour before serving!
